I started dinner tonight and just about finished preparing it when I realized I hadn't been taking pictures for the blog, sorry! But, don't worry, you didn't miss much. Just a lot of chopping :)
I love love love this pie. The best part about it is that you can use whatever veggies you want. I like making it at the end of the week, when I look in the fridge and see what vegetables I have left that need to be used up.
So for this version, my favorite version, you will need;
1/2 cup of original bisquick
2 eggs
1 cup of milk
1/2 tsp salt
1/4 tsp pepper
2 cups shredded cheddar
1/2 cup chopped red bell pepper
1/4 cup chopped onion
1 cup chopped broccoli
1 cup chopped cauliflower
1 cup chopped zuchinni
Add the broccoili and cauliflower to some boiling water for about 3-4 min, just to soften up, drain.
In a bowl, mix the milk, egg, salt, pepper, cheese and bisquick. Fold in all the vegetables.
Pour into a greased 9 in. deep pie plate (an 8x11 casserole dish would work too).
Bake uncovered at 350, for 40 min. Cool for 10 min before slicing.
Mix up the combinations though, asparagus would be great in this, you could even toss in some diced ham and swiss cheese for a different spin! Enjoy!
