Cookies for a Good Cause


There is an organization in Las Vegas, called NPHY, Nevada Partnership for Homeless Youth. http://nphy.org/index.html.  They take in teens that need shelter. And every Friday they host an event called Feel Good Friday, where they go around town and seek teens in need of help. It's an AWESOME outreach program. Anyway, this is where the cookies come in. They are always looking for people to bring in baked goods to hand out during Feel Good Friday. So I have been trying to make cookies for them every Thursday night that I can!

This week I baked 6 dozen, that's when I ran out of butter. Chunky Peanut Butter, and Oatmeal Chocolate Chip

Chunky Peanut Butter;
1 cup unsalted butter
1 1/2 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons baking soda

Preheat oven to 350 degrees.
Cream together butter, peanut butter and sugars. Beat in eggs. 
In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter.
Put batter in refrigerator for 1 hour. 
Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. 
Bake for about 10 minutes or until cookies begin to brown.


Oatmeal Chocolate Chip;
1 cup butter
1 cup light brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups rolled oats
2 cups chocolate chips

Preheat oven to 350 degrees. Lightly grease cookie sheets. 
In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the egg and vanilla.
Sift together the flour, baking powder, baking soda and salt, stir into the creamed mixture. Finally, stir in the rolled oats, white chocolate chips and pecans.
Drop by tablespoons onto the prepared cookie sheets.
Bake for 10 to 12 minutes.
