This recipe was given to me my good, good friend Sara. They are actually a big part of her favorite memories of her grandma. Every time she visited, her grandma had a tin full of fresh ones :)
I'm glad she shared the recipe, they are the perfect cookie to nibble on with a cup of coffee. Enjoy.
Mix 1 cup of shortening with 2 cups of light brown sugar. Add in 3 eggs, one at a time. Slowly, pour in 1/2 cup of cold coffee.
Add 3 1/2 cups of flour, 1 tsp. baking soda, 1 tsp. nutmeg, 1 tsp. cinnamon, and 1 tsp. of salt. Mix well and chill in the refridgerator for at least 1 hour.
Place spoonfuls in drops on a greased cookie sheet. Bake at 400 degrees for 8-10 min.
I blended a little cinnamon and brown sugar to sprinkle over the top as soon as they came out of the oven, just for a little crunch, and well it's pretty :)
Makes 4 dozen.
